Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 milliliters
  • Active dry yeast - 5 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Fresh cilantro - 50 grams, chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Feta cheese - 50 grams, crumbled
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  5. Preheat your oven to 220°C (428°F).
  6. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a flat circle about 0.5 cm thick.
  7. Place the flatbreads on a baking sheet lined with parchment paper.
  8. In a small bowl, mix the chopped cilantro, minced garlic, ground cumin, paprika, feta cheese, and lemon juice together.
  9. Spread the cilantro mixture evenly over each flatbread.
  10. Bake in the preheated oven for about 12-15 minutes, or until the edges are golden and the flatbreads are cooked through.
