- cooked chickpeas - 240 grams
- fresh cilantro - 30 grams, chopped
- red onion - 50 grams, finely chopped
- garlic - 2 cloves, minced
- ground cumin - 1 teaspoon
- ground coriander - 1 teaspoon
- paprika - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- all-purpose flour - 30 grams
- olive oil - 2 tablespoons (for frying)
- lemon juice - 1 tablespoon
Steps
- In a mixing bowl, mash the cooked chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the chopped cilantro, red onion, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper to the mashed chickpeas. Mix well until all ingredients are combined.
- Stir in the all-purpose flour and lemon juice until the mixture holds together. If the mixture is too wet, add a little more flour.
- Shape the mixture into patties, about 8 cm in diameter and 1 cm thick.
- Heat the olive oil in a non-stick skillet over medium heat. Once hot, carefully add the patties to the skillet, cooking for about 4-5 minutes on each side until golden brown and crispy.
- Remove the patties from the skillet and place on paper towels to drain excess oil.
- Serve warm, garnished with extra cilantro and a side of your favorite dipping sauce.
