Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Fresh cilantro - 1 cup, chopped
  • Garlic - 2 cloves, minced
  • Red onion - 1/2 medium, finely chopped
  • Carrot - 1 medium, grated
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat breadcrumbs - 1/2 cup
  • Egg - 1 large (or flax egg for vegan option)
  • Olive oil - 2 tablespoons (for frying)
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Water - 1 tablespoon
  • Pita bread or burger buns - 2 pieces
  • Lettuce and tomato - for serving

Steps

  1. In a large bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add chopped cilantro, minced garlic, chopped red onion, grated carrot, cumin, coriander, paprika, salt, black pepper, breadcrumbs, and the egg (or flax egg). Mix until well combined.
  3. Form the mixture into two patties, about 1 inch thick. If the mixture is too wet, add more breadcrumbs until it holds together.
  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and crispy.
  5. While the patties are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt until smooth.
  6. Toast the pita bread or burger buns lightly in the skillet or oven if desired.
  7. Assemble the burgers by placing each patty on a pita or bun, topped with lettuce, tomato, and a drizzle of tahini sauce. Serve immediately.
