- Canned chickpeas - 400 grams, drained and rinsed
- Fresh cilantro - 1 cup, chopped
- Garlic - 2 cloves, minced
- Red onion - 1/2 medium, finely chopped
- Carrot - 1 medium, grated
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat breadcrumbs - 1/2 cup
- Egg - 1 large (or flax egg for vegan option)
- Olive oil - 2 tablespoons (for frying)
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 1 tablespoon
- Pita bread or burger buns - 2 pieces
- Lettuce and tomato - for serving
Steps
- In a large bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add chopped cilantro, minced garlic, chopped red onion, grated carrot, cumin, coriander, paprika, salt, black pepper, breadcrumbs, and the egg (or flax egg). Mix until well combined.
- Form the mixture into two patties, about 1 inch thick. If the mixture is too wet, add more breadcrumbs until it holds together.
- Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and crispy.
- While the patties are cooking, prepare the tahini sauce by whisking together tahini, lemon juice, water, and a pinch of salt until smooth.
- Toast the pita bread or burger buns lightly in the skillet or oven if desired.
- Assemble the burgers by placing each patty on a pita or bun, topped with lettuce, tomato, and a drizzle of tahini sauce. Serve immediately.
