Ingredients

  • Cauliflower - 300 grams (for the crust)
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Chicken breast - 200 grams, cooked and shredded
  • Cilantro - 30 grams, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 60 grams (no added sugar)
  • Feta cheese - 30 grams, crumbled (for topping)
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 220°C (428°F).
  2. To make the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes, then drain and let cool.
  3. Once cooled, pulse the cauliflower in a food processor until fine. Transfer to a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a mixing bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, egg, olive oil, salt, and pepper until well mixed.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a pizza crust about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and crisp.
  7. While the crust is baking, in a separate bowl, mix the shredded chicken, chopped cilantro, cumin, paprika, garlic powder, lemon juice, salt, and black pepper until well combined.
  8. Once the crust is done, remove it from the oven and spread the tomato sauce evenly on top.
  9. Layer the cilantro chicken mixture over the sauce, then sprinkle with crumbled feta cheese.
  10. Return the pizza to the oven and bake for an additional 10-12 minutes, until the cheese is melted and bubbly.
  11. Remove from the oven, let cool for a few minutes, slice, and serve while warm.
