Ingredients
- Cauliflower - 300 grams (for the crust)
- Mozzarella cheese - 100 grams, shredded
- Parmesan cheese - 30 grams, grated
- Egg - 1 large
- Olive oil - 1 tablespoon
- Chicken breast - 200 grams, cooked and shredded
- Cilantro - 30 grams, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato sauce - 60 grams (no added sugar)
- Feta cheese - 30 grams, crumbled (for topping)
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 220°C (428°F).
- To make the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes, then drain and let cool.
- Once cooled, pulse the cauliflower in a food processor until fine. Transfer to a clean kitchen towel and squeeze out as much moisture as possible.
- In a mixing bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, egg, olive oil, salt, and pepper until well mixed.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and crisp.
- While the crust is baking, in a separate bowl, mix the shredded chicken, chopped cilantro, cumin, paprika, garlic powder, lemon juice, salt, and black pepper until well combined.
- Once the crust is done, remove it from the oven and spread the tomato sauce evenly on top.
- Layer the cilantro chicken mixture over the sauce, then sprinkle with crumbled feta cheese.
- Return the pizza to the oven and bake for an additional 10-12 minutes, until the cheese is melted and bubbly.
- Remove from the oven, let cool for a few minutes, slice, and serve while warm.
