- Zucchini - 200 grams, sliced (for grilling)
- Red onion - 100 grams, sliced (for grilling)
Steps
- In a bowl, mix the chopped cilantro, minced garlic, lemon juice, olive oil, cumin, paprika, salt, black pepper, and red pepper flakes to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes on each side or until fully cooked and juices run clear.
- While the chicken is grilling, toss the sliced zucchini and red onion in a bit of olive oil and salt, and grill them for about 5-6 minutes until tender.
- Serve the grilled chicken with the zucchini and red onion on the side, garnished with additional cilantro if desired.
