  • Chicken thighs - 400 grams
  • Fresh cilantro - 50 grams, chopped

  • Lemon juice - 30 ml
  • Olive oil - 30 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Zucchini - 200 grams, sliced (for grilling)
  • Red onion - 100 grams, sliced (for grilling)

Steps

  1. In a bowl, mix the chopped cilantro, minced garlic, lemon juice, olive oil, cumin, paprika, salt, black pepper, and red pepper flakes to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes on each side or until fully cooked and juices run clear.
  5. While the chicken is grilling, toss the sliced zucchini and red onion in a bit of olive oil and salt, and grill them for about 5-6 minutes until tender.
  6. Serve the grilled chicken with the zucchini and red onion on the side, garnished with additional cilantro if desired.
