Ingredients

  • Chickpeas - 200 grams (cooked and drained)
  • Quinoa - 50 grams (uncooked)
  • Fresh cilantro - 30 grams (finely chopped)
  • Lime juice - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for cooking)
  • Whole grain burger buns - 2
  • Avocado - 1 (sliced for topping)
  • Tomato - 1 (sliced for topping)
  • Lettuce - 2 leaves (for serving)

Steps

  1. Cook the quinoa according to package instructions, then let it cool slightly.
  2. In a large mixing bowl, mash the cooked chickpeas using a fork or potato masher until mostly smooth but still slightly chunky.
  3. Add the cooked quinoa, chopped cilantro, lime juice, cumin, paprika, garlic powder, salt, and black pepper to the mashed chickpeas. Mix until well combined.
  4. Form the mixture into two burger patties, ensuring they hold together well.
  5. Heat olive oil in a non-stick skillet over medium heat. Once hot, add the burger patties and cook for about 5-7 minutes on each side, or until golden brown and crispy.
  6. While the burgers are cooking, prepare the burger buns by toasting them lightly if desired.
  7. Assemble the burgers by placing a patty on each bun, then top with sliced avocado, tomato, and lettuce.
