Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Olive oil - 2 tablespoons
  • Active dry yeast - 1 teaspoon
  • Salt - 1 teaspoon
  • Fresh cilantro - 50 grams, chopped
  • Lemon zest - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5 minutes until smooth.
  4. Cover the dough with a damp cloth and let it rise in a warm place for 20 minutes, or until doubled in size.
  5. Preheat the oven to 220°C (428°F).
  6. Once the dough has risen, punch it down and roll it out on a floured surface into a flatbread shape, about 1 cm thick.
  7. Transfer the flatbread to a baking sheet lined with parchment paper.
  8. In a small bowl, mix together the chopped cilantro, lemon zest, lemon juice, minced garlic, cumin, paprika, and black pepper.
  9. Spread the cilantro mixture evenly over the flatbread.
  10. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
  11. Remove from the oven, let cool slightly, slice, and serve warm.
