Ingredients

  • Chickpeas - 240 grams, cooked
  • Quinoa - 100 grams, cooked
  • Fresh cilantro - 30 grams, chopped
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Breadcrumbs - 50 grams
  • Whole grain burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1, sliced

Steps

  1. In a large mixing bowl, mash the cooked chickpeas with a fork until mostly smooth.
  2. Add the cooked quinoa, chopped cilantro, red onion, garlic, ground cumin, ground coriander, paprika, lemon zest, lemon juice, olive oil, salt, black pepper, and breadcrumbs to the bowl and mix until well combined.
  3. Divide the mixture into two equal portions and shape them into burger patties.
  4. Heat a non-stick skillet over medium heat and add a little olive oil.
  5. Cook the patties for about 5-6 minutes on each side, or until they are golden brown and heated through.
  6. While the patties are cooking, prepare the lemon tahini sauce by mixing tahini, lemon juice, water, salt, and a pinch of cumin in a small bowl until smooth.
  7. To assemble, place each patty on a whole grain burger bun, top with lettuce, tomato, and avocado slices, and drizzle with the lemon tahini sauce.
  8. Serve immediately and enjoy your delicious Moroccan-inspired burger!
