Ingredients

  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 ml
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - 1/4 teaspoon (optional)
  • Water - 1 cup

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and cook for another 2 minutes, until fragrant.
  4. Add the cumin and coriander powders, stirring for 1 minute to release their flavors.
  5. Pour in the vegetable broth and water, bringing the mixture to a gentle boil.
  6. Add the chopped cilantro and simmer for 10 minutes to allow the flavors to meld.
  7. Blend the soup using an immersion blender until smooth, or transfer to a blender in batches.
  8. Stir in the lemon juice, and season with salt, black pepper, and chili flakes to taste.
