Ingredients

  • chickpea flour - 150 grams
  • water - 250 ml
  • cumin powder - 1 teaspoon
  • paprika - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • olive oil - 2 tablespoons (for cooking)
  • red bell pepper - 1, diced
  • green onion - 2, chopped
  • fresh parsley - 2 tablespoons, chopped
  • tomato - 1, diced
  • lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, combine chickpea flour, water, cumin, paprika, salt, and black pepper. Whisk until smooth and let it rest for 10 minutes.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  3. Pour half of the chickpea batter into the skillet and spread it evenly to form a pancake. Cook for about 5 minutes or until the edges start to lift.
  4. Flip the pancake and cook for another 3-4 minutes until golden brown. Remove and keep warm. Repeat with the remaining batter to make the second pancake.
  5. In a bowl, mix the diced red bell pepper, chopped green onion, chopped parsley, diced tomato, and lemon juice. Season with salt and pepper to taste.
  6. Serve the chickpea pancakes topped with the fresh vegetable mixture.
