Ingredients

  • Eggplant - 200 grams
  • Zucchini - 150 grams
  • Red bell pepper - 100 grams
  • Red onion - 100 grams
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Chickpeas - 100 grams, cooked

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Dice the eggplant, zucchini, red bell pepper, and red onion into 1-inch pieces.
  3. Mince the garlic cloves.
  4. In a large bowl, combine the diced vegetables, minced garlic, olive oil, cumin, paprika, salt, and black pepper. Toss well to coat the vegetables evenly.
  5. Spread the vegetable mixture on a baking sheet in a single layer.
  6. Roast the vegetables in the preheated oven for 20-25 minutes or until tender and slightly charred, stirring halfway through.
  7. Remove the roasted vegetables from the oven and let them cool for a few minutes.
  8. In a serving bowl, combine the roasted vegetables with cooked chickpeas, lemon juice, and chopped parsley. Toss gently to combine.
  9. Serve the salad warm or at room temperature.
