Ingredients
- Eggplant - 200 grams
- Zucchini - 150 grams
- Red bell pepper - 100 grams
- Red onion - 100 grams
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Chickpeas - 100 grams, cooked
Steps
- Preheat the oven to 200°C (400°F).
- Dice the eggplant, zucchini, red bell pepper, and red onion into 1-inch pieces.
- Mince the garlic cloves.
- In a large bowl, combine the diced vegetables, minced garlic, olive oil, cumin, paprika, salt, and black pepper. Toss well to coat the vegetables evenly.
- Spread the vegetable mixture on a baking sheet in a single layer.
- Roast the vegetables in the preheated oven for 20-25 minutes or until tender and slightly charred, stirring halfway through.
- Remove the roasted vegetables from the oven and let them cool for a few minutes.
- In a serving bowl, combine the roasted vegetables with cooked chickpeas, lemon juice, and chopped parsley. Toss gently to combine.
- Serve the salad warm or at room temperature.
