- Chicken breast - 200 grams, diced
- Chickpeas - 100 grams, cooked
- Tomato paste - 2 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 1 liter
- Cilantro - 2 tablespoons, chopped (for garnish)
- Lemon - 1, cut into wedges (for serving)
Steps
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until translucent, about 3-4 minutes.
- Add the diced carrots and celery to the pot, cooking for an additional 5 minutes until softened.
- Stir in the diced chicken breast and cook until browned on all sides, about 5-7 minutes.
- Mix in the cooked chickpeas, tomato paste, cumin, coriander, paprika, salt, and black pepper, cooking for another 2 minutes.
- Pour in the water, bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, allowing the flavors to meld.
- Taste and adjust seasoning if necessary, then serve hot, garnished with chopped cilantro and lemon wedges on the side.
