Ingredients

  • Carrots - 1 medium, diced
  • Celery - 1 stalk, diced
  • Chicken breast - 200 grams, diced
  • Chickpeas - 100 grams, cooked
  • Tomato paste - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 1 liter
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Lemon - 1, cut into wedges (for serving)

Steps

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, sauté until translucent, about 3-4 minutes.
  2. Add the diced carrots and celery to the pot, cooking for an additional 5 minutes until softened.
  3. Stir in the diced chicken breast and cook until browned on all sides, about 5-7 minutes.
  4. Mix in the cooked chickpeas, tomato paste, cumin, coriander, paprika, salt, and black pepper, cooking for another 2 minutes.
  5. Pour in the water, bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, allowing the flavors to meld.
  6. Taste and adjust seasoning if necessary, then serve hot, garnished with chopped cilantro and lemon wedges on the side.
