Ingredients
- Green or brown lentils - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Vegetable broth - 800 milliliters
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the diced carrot and celery to the pot and cook for an additional 3-4 minutes.
- Stir in the minced garlic, diced tomato, cumin, paprika, and cinnamon. Cook for 2 minutes until fragrant.
- Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, or until the lentils are tender.
- Season with salt and black pepper to taste. If the soup is too thick, add a little more broth or water.
- Serve hot, garnished with fresh parsley.
