Ingredients

  • Green or brown lentils - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Vegetable broth - 800 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the diced carrot and celery to the pot and cook for an additional 3-4 minutes.
  4. Stir in the minced garlic, diced tomato, cumin, paprika, and cinnamon. Cook for 2 minutes until fragrant.
  5. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, or until the lentils are tender.
  6. Season with salt and black pepper to taste. If the soup is too thick, add a little more broth or water.
  7. Serve hot, garnished with fresh parsley.
