- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1, diced
- Chickpeas - 240 grams (1 can, drained and rinsed)
- Tomatoes - 400 grams (1 can, diced)
- Vegetable broth - 500 milliliters
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - ½ teaspoon
- Cinnamon - ¼ teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - ¼ cup, chopped (for garnish)
- Lemon - 1, juiced
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and celery to the pot. Sauté for an additional 5 minutes, stirring occasionally.
- Stir in the diced zucchini and red bell pepper, cooking for another 5 minutes until softened.
- Add the drained chickpeas, diced tomatoes (with their juice), vegetable broth, cumin, coriander, paprika, turmeric, cinnamon, salt, and black pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, allowing the flavors to meld.
- Before serving, stir in the lemon juice and adjust seasoning if necessary.
- Ladle the soup into bowls and garnish with chopped fresh cilantro. Serve hot.
