Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1, diced
  • Chickpeas - 240 grams (1 can, drained and rinsed)
  • Tomatoes - 400 grams (1 can, diced)
  • Vegetable broth - 500 milliliters
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - ½ teaspoon
  • Cinnamon - ¼ teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - ¼ cup, chopped (for garnish)
  • Lemon - 1, juiced

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrot, and celery to the pot. Sauté for an additional 5 minutes, stirring occasionally.
  3. Stir in the diced zucchini and red bell pepper, cooking for another 5 minutes until softened.
  4. Add the drained chickpeas, diced tomatoes (with their juice), vegetable broth, cumin, coriander, paprika, turmeric, cinnamon, salt, and black pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, allowing the flavors to meld.
  6. Before serving, stir in the lemon juice and adjust seasoning if necessary.
  7. Ladle the soup into bowls and garnish with chopped fresh cilantro. Serve hot.
