Ingredients

  • Pizza Dough - 1 pre-made or homemade (about 250g)
  • Canned Chickpeas - 1 cup (240g), drained and rinsed
  • Olive Oil - 2 tablespoons
  • Za'atar Spice Blend - 2 tablespoons
  • Cherry Tomatoes - 1 cup (150g), halved
  • Red Onion - 1/2 medium, thinly sliced
  • Bell Pepper - 1/2 medium, thinly sliced
  • Fresh Parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black Pepper - to taste

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a bowl, toss the drained chickpeas with 1 tablespoon of olive oil, 1 tablespoon of za'atar, salt, and black pepper. Spread them on a baking sheet and roast in the oven for about 10-12 minutes until crispy.
  3. While the chickpeas are roasting, roll out the pizza dough on a floured surface to your desired thickness.
  4. Transfer the rolled-out dough to a baking sheet or pizza stone.
  5. Brush the remaining tablespoon of olive oil over the dough and sprinkle with the remaining tablespoon of za'atar.
  6. Arrange the halved cherry tomatoes, sliced red onion, and bell pepper evenly over the pizza base.
  7. Once the chickpeas are done roasting, sprinkle them over the vegetables on the pizza.
  8. Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
  9. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before slicing and serving.
