Ingredients
- Pizza Dough - 1 pre-made or homemade (about 250g)
- Canned Chickpeas - 1 cup (240g), drained and rinsed
- Olive Oil - 2 tablespoons
- Za'atar Spice Blend - 2 tablespoons
- Cherry Tomatoes - 1 cup (150g), halved
- Red Onion - 1/2 medium, thinly sliced
- Bell Pepper - 1/2 medium, thinly sliced
- Fresh Parsley - 2 tablespoons, chopped
- Salt - to taste
- Black Pepper - to taste
Steps
- Preheat the oven to 220°C (425°F).
- In a bowl, toss the drained chickpeas with 1 tablespoon of olive oil, 1 tablespoon of za'atar, salt, and black pepper. Spread them on a baking sheet and roast in the oven for about 10-12 minutes until crispy.
- While the chickpeas are roasting, roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the rolled-out dough to a baking sheet or pizza stone.
- Brush the remaining tablespoon of olive oil over the dough and sprinkle with the remaining tablespoon of za'atar.
- Arrange the halved cherry tomatoes, sliced red onion, and bell pepper evenly over the pizza base.
- Once the chickpeas are done roasting, sprinkle them over the vegetables on the pizza.
- Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before slicing and serving.
