- Pizza dough - 200 grams
- Canned chickpeas - 240 grams (drained and rinsed)
- Olive oil - 2 tablespoons
- Red onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, grated
- Red bell pepper - 1 medium, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato paste - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Feta cheese - 100 grams, crumbled
- Mozzarella cheese - 100 grams, shredded
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the pizza dough on a floured surface to your desired thickness and shape, then place it on a baking tray lined with parchment paper.
- In a skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for 3-4 minutes until softened.
- Add the minced garlic, grated carrot, and diced red bell pepper to the skillet. Cook for an additional 5 minutes until the vegetables are tender.
- Stir in the drained chickpeas, cumin, coriander, paprika, cinnamon, salt, and black pepper. Cook for 3-4 minutes, mixing well.
- Add the tomato paste and half of the chopped cilantro to the chickpea mixture, stirring until well combined. Remove from heat.
- Spread the chickpea mixture evenly over the prepared pizza dough.
- Sprinkle the crumbled feta and shredded mozzarella cheese over the top.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
- Remove from the oven and garnish with the remaining chopped cilantro before slicing and serving.
