Ingredients

  • Pizza dough - 200 grams
  • Canned chickpeas - 240 grams (drained and rinsed)
  • Olive oil - 2 tablespoons
  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, grated
  • Red bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato paste - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Feta cheese - 100 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the pizza dough on a floured surface to your desired thickness and shape, then place it on a baking tray lined with parchment paper.
  3. In a skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for 3-4 minutes until softened.
  4. Add the minced garlic, grated carrot, and diced red bell pepper to the skillet. Cook for an additional 5 minutes until the vegetables are tender.
  5. Stir in the drained chickpeas, cumin, coriander, paprika, cinnamon, salt, and black pepper. Cook for 3-4 minutes, mixing well.
  6. Add the tomato paste and half of the chopped cilantro to the chickpea mixture, stirring until well combined. Remove from heat.
  7. Spread the chickpea mixture evenly over the prepared pizza dough.
  8. Sprinkle the crumbled feta and shredded mozzarella cheese over the top.
  9. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
  10. Remove from the oven and garnish with the remaining chopped cilantro before slicing and serving.
