Ingredients

  • cooked chickpeas - 240 grams
  • red onion - 1 small, finely chopped
  • garlic - 2 cloves, minced
  • carrot - 1 medium, grated
  • fresh parsley - 30 grams, chopped
  • ground cumin - 1 teaspoon
  • ground coriander - 1 teaspoon
  • smoked paprika - 1/2 teaspoon
  • cinnamon - 1/4 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • whole wheat flour - 40 grams
  • olive oil - 2 tablespoons
  • whole wheat pita bread - 2 pieces
  • tahini - 2 tablespoons
  • lemon juice - 1 tablespoon
  • mixed salad greens - 100 grams
  • tomato - 1 medium, sliced
  • cucumber - 1 small, sliced

Steps

  1. In a mixing bowl, mash the cooked chickpeas with a fork or potato masher until slightly chunky.
  2. Add the chopped red onion, minced garlic, grated carrot, and chopped parsley to the mashed chickpeas.
  3. Stir in the ground cumin, ground coriander, smoked paprika, cinnamon, salt, black pepper, and whole wheat flour until well combined.
  4. Form the mixture into two patties, about 2.5 cm thick.
  5. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
  6. While the patties are cooking, mix tahini with lemon juice and a little water to thin it out into a sauce.
  7. Warm the pita bread in the skillet for about 1 minute on each side.
  8. Assemble the burgers by placing a chickpea patty in each pita, then topping with mixed salad greens, sliced tomato, cucumber, and a drizzle of tahini sauce.
