Ingredients
- cooked chickpeas - 240 grams
- red onion - 1 small, finely chopped
- garlic - 2 cloves, minced
- carrot - 1 medium, grated
- fresh parsley - 30 grams, chopped
- ground cumin - 1 teaspoon
- ground coriander - 1 teaspoon
- smoked paprika - 1/2 teaspoon
- cinnamon - 1/4 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- whole wheat flour - 40 grams
- olive oil - 2 tablespoons
- whole wheat pita bread - 2 pieces
- tahini - 2 tablespoons
- lemon juice - 1 tablespoon
- mixed salad greens - 100 grams
- tomato - 1 medium, sliced
- cucumber - 1 small, sliced
Steps
- In a mixing bowl, mash the cooked chickpeas with a fork or potato masher until slightly chunky.
- Add the chopped red onion, minced garlic, grated carrot, and chopped parsley to the mashed chickpeas.
- Stir in the ground cumin, ground coriander, smoked paprika, cinnamon, salt, black pepper, and whole wheat flour until well combined.
- Form the mixture into two patties, about 2.5 cm thick.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, mix tahini with lemon juice and a little water to thin it out into a sauce.
- Warm the pita bread in the skillet for about 1 minute on each side.
- Assemble the burgers by placing a chickpea patty in each pita, then topping with mixed salad greens, sliced tomato, cucumber, and a drizzle of tahini sauce.
