- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Canned tomatoes - 400 grams, crushed
- Vegetable broth - 500 milliliters
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish (optional)
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and diced celery to the pot. Cook for an additional 5 minutes until the vegetables are softened.
- Stir in the cumin, coriander, paprika, turmeric, and cinnamon, and cook for 1 minute to release their flavors.
- Add the crushed tomatoes and cook for 2-3 minutes, allowing the flavors to meld.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat to low and add the chickpeas. Simmer for 15 minutes to let the flavors develop.
- Season with salt and black pepper to taste. If desired, blend a portion of the soup for a creamier texture.
- Serve hot, garnished with fresh cilantro if using.
