Ingredients

  • Chickpeas - 200 grams (canned or cooked)

  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Canned tomatoes - 400 grams, crushed
  • Vegetable broth - 500 milliliters
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish (optional)

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrot, and diced celery to the pot. Cook for an additional 5 minutes until the vegetables are softened.
  3. Stir in the cumin, coriander, paprika, turmeric, and cinnamon, and cook for 1 minute to release their flavors.
  4. Add the crushed tomatoes and cook for 2-3 minutes, allowing the flavors to meld.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Once boiling, reduce the heat to low and add the chickpeas. Simmer for 15 minutes to let the flavors develop.
  7. Season with salt and black pepper to taste. If desired, blend a portion of the soup for a creamier texture.
  8. Serve hot, garnished with fresh cilantro if using.
