- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
- Add the diced carrot, red bell pepper, and zucchini to the pan, cooking for an additional 5 minutes until the vegetables begin to soften.
- Stir in the ground cumin, coriander, cinnamon, and turmeric, cooking for another minute to toast the spices.
- Add the drained chickpeas and basmati rice to the pan, stirring to combine all ingredients.
- Pour in the vegetable broth, and season with salt and black pepper. Bring to a boil, then reduce heat to low, cover the pan, and simmer for 15-20 minutes until the rice is cooked and has absorbed the liquid.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Serve the Chickpea Rice Tagine warm, garnished with fresh parsley.
