  • Vegetable broth - 300 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
  2. Add the diced carrot, red bell pepper, and zucchini to the pan, cooking for an additional 5 minutes until the vegetables begin to soften.
  3. Stir in the ground cumin, coriander, cinnamon, and turmeric, cooking for another minute to toast the spices.
  4. Add the drained chickpeas and basmati rice to the pan, stirring to combine all ingredients.
  5. Pour in the vegetable broth, and season with salt and black pepper. Bring to a boil, then reduce heat to low, cover the pan, and simmer for 15-20 minutes until the rice is cooked and has absorbed the liquid.
  6. Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  7. Serve the Chickpea Rice Tagine warm, garnished with fresh parsley.
