- Basmati rice - 1 cup (200g)
- Canned chickpeas - 1 cup (240g), drained and rinsed
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Vegetable broth - 2 cups (480ml)
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Raisins - 1/4 cup (40g)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and diced carrot to the pan, cooking for an additional 2-3 minutes until the carrot softens.
- Stir in the cumin, cinnamon, turmeric, salt, and black pepper, cooking for another minute to toast the spices.
- Drain the soaked rice and add it to the saucepan along with the drained chickpeas and raisins. Stir to combine with the vegetables and spices.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with chopped fresh parsley and serve warm.
