Ingredients

  • Basmati rice - 1 cup (200g)
  • Canned chickpeas - 1 cup (240g), drained and rinsed
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Vegetable broth - 2 cups (480ml)
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Raisins - 1/4 cup (40g)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  3. Add the minced garlic and diced carrot to the pan, cooking for an additional 2-3 minutes until the carrot softens.
  4. Stir in the cumin, cinnamon, turmeric, salt, and black pepper, cooking for another minute to toast the spices.
  5. Drain the soaked rice and add it to the saucepan along with the drained chickpeas and raisins. Stir to combine with the vegetables and spices.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is cooked and has absorbed the liquid.
  7. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.
  8. Garnish with chopped fresh parsley and serve warm.
