Ingredients

  • Basmati rice - 150 grams
  • Canned chickpeas - 240 grams (drained and rinsed)
  • Vegetable broth - 400 ml
  • Onion - 1 medium (finely chopped)
  • Garlic - 2 cloves (minced)
  • Carrot - 1 medium (diced)
  • Red bell pepper - 1 medium (diced)
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons (chopped, for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 5 minutes.
  3. Add the diced carrot and red bell pepper to the pot, cooking for another 3-4 minutes until slightly softened.
  4. Stir in the ground cumin, ground coriander, paprika, salt, and black pepper, cooking for 1 minute until fragrant.
  5. Drain the soaked rice and add it to the pot, stirring to combine with the vegetables and spices.
  6. Pour in the vegetable broth and add the chickpeas. Bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and simmer for about 15 minutes, or until the rice is cooked and has absorbed all the liquid.
  8. Remove the pot from heat and let it sit, covered, for another 5 minutes.
  9. Fluff the rice with a fork and garnish with fresh parsley before serving.
