- Basmati rice - 150 grams
- Canned chickpeas - 240 grams (drained and rinsed)
- Vegetable broth - 400 ml
- Onion - 1 medium (finely chopped)
- Garlic - 2 cloves (minced)
- Carrot - 1 medium (diced)
- Red bell pepper - 1 medium (diced)
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons (chopped, for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 5 minutes.
- Add the diced carrot and red bell pepper to the pot, cooking for another 3-4 minutes until slightly softened.
- Stir in the ground cumin, ground coriander, paprika, salt, and black pepper, cooking for 1 minute until fragrant.
- Drain the soaked rice and add it to the pot, stirring to combine with the vegetables and spices.
- Pour in the vegetable broth and add the chickpeas. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for about 15 minutes, or until the rice is cooked and has absorbed all the liquid.
- Remove the pot from heat and let it sit, covered, for another 5 minutes.
- Fluff the rice with a fork and garnish with fresh parsley before serving.
