- Chickpeas - 1 cup (cooked or canned, drained and rinsed)
- Pita Bread - 2 pieces
- Olive Oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
- Fresh Parsley - 2 tablespoons, chopped
- Tahini - 3 tablespoons
- Lemon Juice - 1 tablespoon
- Water - 2 tablespoons
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
Steps
- Preheat the oven to 180°C (350°F).
- Place the pita bread on a baking sheet and drizzle with 1 tablespoon of olive oil. Bake for 8-10 minutes or until crispy.
- In a skillet over medium heat, add the remaining tablespoon of olive oil and sauté the minced garlic until fragrant, about 1 minute.
- Add the cooked chickpeas to the skillet along with cumin, paprika, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the chickpeas are heated through.
- In a small bowl, whisk together tahini, lemon juice, and water until smooth. Adjust consistency with more water if needed.
- Once the pita is crispy, remove from the oven and break it into pieces in a serving dish.
- Top the pita pieces with the chickpea mixture, followed by diced tomatoes and cucumbers.
- Drizzle the tahini sauce over the top and garnish with chopped parsley before serving.
