Ingredients

  • Chickpeas - 200 grams (cooked or canned, drained)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 50 grams
  • Water - 100 milliliters
  • Red bell pepper - 1 (diced)
  • Zucchini - 1 small (diced)
  • Cherry tomatoes - 100 grams (halved)
  • Fresh parsley - a handful (chopped)
  • Feta cheese - 50 grams (crumbled)
  • Lemon - 1 (for juice)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a food processor, blend the cooked chickpeas, olive oil, minced garlic, cumin, paprika, salt, and black pepper until smooth.
  3. Add the chickpea flour and water to the mixture and blend until well combined.
  4. Spread the chickpea mixture onto a parchment-lined baking tray, shaping it into a round pizza base about 1 cm thick.
  5. Bake the chickpea base in the preheated oven for 15 minutes until firm and slightly golden.
  6. While the base is baking, prepare the toppings by sautéing the diced red bell pepper and zucchini in a pan over medium heat for about 5 minutes until softened.
  7. Remove the base from the oven, then top it with the sautéed vegetables, halved cherry tomatoes, and crumbled feta cheese.
  8. Return the pizza to the oven and bake for an additional 10 minutes until the toppings are heated through and the cheese is slightly melted.
  9. Remove from the oven, drizzle with fresh lemon juice, and sprinkle chopped parsley on top before serving.
