- Chickpeas - 200 grams (cooked or canned, drained)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves (minced)
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpea flour - 50 grams
- Water - 100 milliliters
- Red bell pepper - 1 (diced)
- Zucchini - 1 small (diced)
- Cherry tomatoes - 100 grams (halved)
- Fresh parsley - a handful (chopped)
- Feta cheese - 50 grams (crumbled)
- Lemon - 1 (for juice)
Steps
- Preheat the oven to 220°C (428°F).
- In a food processor, blend the cooked chickpeas, olive oil, minced garlic, cumin, paprika, salt, and black pepper until smooth.
- Add the chickpea flour and water to the mixture and blend until well combined.
- Spread the chickpea mixture onto a parchment-lined baking tray, shaping it into a round pizza base about 1 cm thick.
- Bake the chickpea base in the preheated oven for 15 minutes until firm and slightly golden.
- While the base is baking, prepare the toppings by sautéing the diced red bell pepper and zucchini in a pan over medium heat for about 5 minutes until softened.
- Remove the base from the oven, then top it with the sautéed vegetables, halved cherry tomatoes, and crumbled feta cheese.
- Return the pizza to the oven and bake for an additional 10 minutes until the toppings are heated through and the cheese is slightly melted.
- Remove from the oven, drizzle with fresh lemon juice, and sprinkle chopped parsley on top before serving.
