- canned chickpeas - 400 grams, drained and rinsed
- red onion - 1 small, roughly chopped
- fresh parsley - 30 grams, chopped
- fresh cilantro - 30 grams, chopped
- garlic - 2 cloves, minced
- ground cumin - 1 teaspoon
- ground coriander - 1 teaspoon
- smoked paprika - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- olive oil - 2 tablespoons
- whole wheat bread crumbs - 50 grams
- egg - 1 large
- lemon juice - 1 tablespoon
Steps
- In a food processor, combine the drained chickpeas, red onion, parsley, cilantro, garlic, cumin, coriander, smoked paprika, salt, and black pepper. Pulse until coarsely blended, but not pureed.
- Transfer the mixture to a bowl and add the bread crumbs, egg, and lemon juice. Mix well until fully incorporated.
- Divide the mixture into 4 equal portions and shape each portion into a patty.
- Heat olive oil in a non-stick skillet over medium heat. Add the patties and cook for about 4-5 minutes on each side, until golden brown and heated through.
- Serve the chickpea kefta warm in pita bread or on a plate with a side of yogurt sauce and fresh salad.
