Ingredients

  • canned chickpeas - 400 grams, drained and rinsed
  • red onion - 1 small, roughly chopped
  • fresh parsley - 30 grams, chopped
  • fresh cilantro - 30 grams, chopped
  • garlic - 2 cloves, minced
  • ground cumin - 1 teaspoon
  • ground coriander - 1 teaspoon
  • smoked paprika - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • olive oil - 2 tablespoons
  • whole wheat bread crumbs - 50 grams
  • egg - 1 large
  • lemon juice - 1 tablespoon

Steps

  1. In a food processor, combine the drained chickpeas, red onion, parsley, cilantro, garlic, cumin, coriander, smoked paprika, salt, and black pepper. Pulse until coarsely blended, but not pureed.
  2. Transfer the mixture to a bowl and add the bread crumbs, egg, and lemon juice. Mix well until fully incorporated.
  3. Divide the mixture into 4 equal portions and shape each portion into a patty.
  4. Heat olive oil in a non-stick skillet over medium heat. Add the patties and cook for about 4-5 minutes on each side, until golden brown and heated through.
  5. Serve the chickpea kefta warm in pita bread or on a plate with a side of yogurt sauce and fresh salad.
