Chickpea Fritters
These Moroccan-inspired chickpea fritters are crispy on the outside and tender on the inside, bursting with aromatic spices. Perfect as an appetizer, they are served with a zesty tahini dipping sauce that complements their flavor beautifully.

Ingredients
- Canned chickpeas - 240 grams, drained and rinsed
- Fresh parsley - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Garlic - 2 cloves, minced
- Red onion - 50 grams, finely chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpea flour - 60 grams
- Olive oil - for frying
- Tahini - 30 grams
- Lemon juice - 1 tablespoon
- Water - 2 tablespoons
- Salt - a pinch (for sauce)
Steps
- In a bowl, mash the drained chickpeas with a fork or potato masher until chunky but not pureed.
- Add the chopped parsley, cilantro, minced garlic, red onion, cumin, coriander, paprika, salt, and pepper to the mashed chickpeas. Mix well.
- Sprinkle in the chickpea flour and combine until the mixture holds together. If too dry, add a little water.
- Form the mixture into small patties, about 5 cm wide and 1 cm thick.
- Heat olive oil in a skillet over medium heat. Once hot, add the fritters in batches, making sure not to overcrowd the pan.
- Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
- In a small bowl, whisk together tahini, lemon juice, water, and a pinch of salt until smooth to create the dipping sauce.
- Serve the fritters warm with the tahini sauce on the side.
