Ingredients

  • Canned chickpeas - 400 grams, drained and rinsed
  • Red bell pepper - 1, cut into 2 cm cubes
  • Zucchini - 1 small, cut into 2 cm cubes
  • Red onion - 1 small, cut into wedges
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. In a mixing bowl, combine the olive oil, cumin, coriander, smoked paprika, garlic powder, salt, black pepper, lemon juice, and chopped parsley to create a marinade.
  2. Add the drained chickpeas, red bell pepper, zucchini, and red onion into the bowl and toss gently until all the vegetables and chickpeas are well coated in the marinade. Let it marinate for at least 15 minutes.
  3. Preheat a grill or grill pan over medium heat.
  4. Thread the marinated chickpeas and vegetables onto the skewers, alternating between the chickpeas and the vegetables.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
  6. Remove from the grill and serve immediately, garnished with additional fresh parsley if desired.
