- Vegetable broth - 400 ml
- Fresh spinach - 150 grams, roughly chopped

- Lemon juice - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic, diced carrot, and red bell pepper, and cook for an additional 5 minutes.
- Add the ground cumin, coriander, paprika, and cinnamon, stirring to coat the vegetables evenly.
- Add the drained chickpeas and vegetable broth, and bring the mixture to a gentle simmer.
- Reduce the heat and let it simmer for 10 minutes, allowing the flavors to meld.
- Stir in the chopped spinach and cook for another 5 minutes until wilted.
- Season with salt, black pepper, and lemon juice to taste.
- Serve hot, garnished with fresh cilantro.
