  • Chickpeas - 400 grams (canned, drained and rinsed)
  • Vegetable broth - 400 ml
  • Fresh spinach - 150 grams, roughly chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic, diced carrot, and red bell pepper, and cook for an additional 5 minutes.
  4. Add the ground cumin, coriander, paprika, and cinnamon, stirring to coat the vegetables evenly.
  5. Add the drained chickpeas and vegetable broth, and bring the mixture to a gentle simmer.
  6. Reduce the heat and let it simmer for 10 minutes, allowing the flavors to meld.
  7. Stir in the chopped spinach and cook for another 5 minutes until wilted.
  8. Season with salt, black pepper, and lemon juice to taste.
  9. Serve hot, garnished with fresh cilantro.
