- Canned chickpeas - 240 grams, drained and rinsed
- Fresh spinach - 100 grams, chopped
- Red bell pepper - 1, cut into 2 cm pieces
- Red onion - 1, cut into 2 cm pieces
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Garlic powder - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Skewers - 4 (if wooden, soaked in water for 30 minutes)
Steps
- In a mixing bowl, combine the drained chickpeas, chopped spinach, ground cumin, ground coriander, paprika, salt, black pepper, garlic powder, and lemon juice. Mix well until the chickpeas are coated with the spices.
- Preheat your grill or BBQ to medium heat.
- Thread the chickpea and spinach mixture onto the skewers, alternating with pieces of red bell pepper and red onion.
- Brush the skewers lightly with olive oil to prevent sticking.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the vegetables are tender and lightly charred.
- Remove from the grill and let rest for a couple of minutes before serving.
