Ingredients

  • Chickpeas - 200 grams, cooked
  • Basmati rice - 150 grams, uncooked
  • Vegetable broth - 400 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, diced carrot, and diced red bell pepper. Cook for an additional 5 minutes until the vegetables are softened.
  3. Add the cooked chickpeas, cumin, coriander, paprika, turmeric, salt, and black pepper to the pan. Stir well to combine and cook for 2-3 minutes until the spices are fragrant.
  4. Add the uncooked basmati rice to the mixture and stir for another minute, allowing the rice to absorb the flavors.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
  6. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
  7. Garnish with fresh cilantro and serve warm.
