- Basmati rice - 150 grams, uncooked
- Vegetable broth - 400 ml
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, and diced red bell pepper. Cook for an additional 5 minutes until the vegetables are softened.
- Add the cooked chickpeas, cumin, coriander, paprika, turmeric, salt, and black pepper to the pan. Stir well to combine and cook for 2-3 minutes until the spices are fragrant.
- Add the uncooked basmati rice to the mixture and stir for another minute, allowing the rice to absorb the flavors.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 15 minutes or until the rice is cooked and liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh cilantro and serve warm.
