Ingredients

  • Chickpeas - 1 can (400g), drained and rinsed
  • Olives (green or black) - 100g, pitted and sliced
  • Red onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Tart base (store-bought or homemade) - 1 (approximately 25cm diameter)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped red onion and minced garlic until translucent, about 5 minutes.
  3. Add the drained chickpeas, cumin, coriander, paprika, salt, and pepper to the skillet. Stir well and cook for another 5-7 minutes until the chickpeas are heated through and slightly golden.
  4. Remove from heat and stir in the sliced olives and chopped parsley.
  5. Place the tart base on a baking sheet and spread the chickpea mixture evenly over it.
  6. Drizzle the remaining tablespoon of olive oil over the top.
  7. Bake in the preheated oven for 15-20 minutes until the edges of the tart are golden and crispy.
  8. Remove from oven, let cool slightly, and slice into wedges to serve.
