Chickpea and Olive Tart

Ingredients
- Chickpeas - 1 can (400g), drained and rinsed
- Olives (green or black) - 100g, pitted and sliced
- Red onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Tart base (store-bought or homemade) - 1 (approximately 25cm diameter)
Steps
- Preheat your oven to 200°C (400°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped red onion and minced garlic until translucent, about 5 minutes.
- Add the drained chickpeas, cumin, coriander, paprika, salt, and pepper to the skillet. Stir well and cook for another 5-7 minutes until the chickpeas are heated through and slightly golden.
- Remove from heat and stir in the sliced olives and chopped parsley.
- Place the tart base on a baking sheet and spread the chickpea mixture evenly over it.
- Drizzle the remaining tablespoon of olive oil over the top.
- Bake in the preheated oven for 15-20 minutes until the edges of the tart are golden and crispy.
- Remove from oven, let cool slightly, and slice into wedges to serve.
