Ingredients

  • Chickpeas - 200 grams (cooked or canned)
  • Carrots - 2 medium, sliced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Vegetable broth - 250 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a tagine or heavy-bottomed pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the sliced carrots and cook for 3-4 minutes, stirring occasionally.
  5. Add the diced tomato, cooked chickpeas, vegetable broth, cumin, coriander, cinnamon, paprika, salt, and black pepper.
  6. Bring the mixture to a simmer and reduce the heat to low. Cover and cook for 15-20 minutes until the carrots are tender.
  7. Remove from heat and stir in the lemon juice and chopped cilantro.
  8. Serve warm over couscous or with crusty bread.
