Ingredients
- Chickpeas - 200 grams (cooked or canned)
- Carrots - 2 medium, sliced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Vegetable broth - 250 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a tagine or heavy-bottomed pot over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the sliced carrots and cook for 3-4 minutes, stirring occasionally.
- Add the diced tomato, cooked chickpeas, vegetable broth, cumin, coriander, cinnamon, paprika, salt, and black pepper.
- Bring the mixture to a simmer and reduce the heat to low. Cover and cook for 15-20 minutes until the carrots are tender.
- Remove from heat and stir in the lemon juice and chopped cilantro.
- Serve warm over couscous or with crusty bread.
