Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, finely chopped
  • Red bell pepper - 1, chopped
  • Zucchini - 1 medium, sliced
  • Eggplant - 1 small, diced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas - 100 grams, canned and drained
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. In a large bowl, combine the chicken thighs with olive oil, minced garlic, ground cumin, ground coriander, cinnamon, paprika, salt, and black pepper. Mix well and let marinate for at least 30 minutes.
  2. Heat a tajine or a heavy-bottomed pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the marinated chicken to the pot and cook for about 10 minutes, turning occasionally until browned on all sides.
  4. Stir in the chopped red bell pepper, sliced zucchini, and diced eggplant. Cook for another 5 minutes.
  5. Add the drained chickpeas and enough water to cover the ingredients halfway. Bring to a simmer, then cover and reduce heat to low.
  6. Cook for 20 minutes, stirring occasionally, until the chicken is cooked through and vegetables are tender.
  7. Stir in fresh parsley and lemon juice just before serving.
