Ingredients
- Chicken thighs - 400 grams, boneless and skinless
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken broth - 250 ml
- Dried apricots - 50 grams, chopped
- Almonds - 30 grams, slivered
- Fresh cilantro - 2 tablespoons, chopped
- Rice (long grain or basmati) - 150 grams
- Water - 300 ml
Steps
- In a tagine or large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
- Add the minced garlic, ground cumin, ground coriander, cinnamon, turmeric, salt, and black pepper. Stir well and cook for another 2 minutes until fragrant.
- Add the chicken thighs to the skillet and brown them on all sides, about 5-7 minutes.
- Pour in the chicken broth and bring the mixture to a simmer. Add the chopped dried apricots and cover the tagine or skillet with a lid.
- Reduce the heat to low and let it simmer for 20 minutes until the chicken is cooked through and tender.
- While the chicken is cooking, rinse the rice under cold water until the water runs clear. In a separate pot, bring 300 ml of water to a boil and add the rinsed rice and a pinch of salt.
- Cover and reduce the heat to low, cooking for about 15 minutes until the rice is fluffy and all the water is absorbed.
- Once the chicken is done, stir in the slivered almonds and chopped cilantro, and let it cook for an additional 2 minutes.
- Serve the chicken tagine over the rice, garnished with additional cilantro if desired.
