Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 250 ml
  • Dried apricots - 50 grams, chopped
  • Almonds - 30 grams, slivered
  • Fresh cilantro - 2 tablespoons, chopped
  • Rice (long grain or basmati) - 150 grams
  • Water - 300 ml

Steps

  1. In a tagine or large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
  2. Add the minced garlic, ground cumin, ground coriander, cinnamon, turmeric, salt, and black pepper. Stir well and cook for another 2 minutes until fragrant.
  3. Add the chicken thighs to the skillet and brown them on all sides, about 5-7 minutes.
  4. Pour in the chicken broth and bring the mixture to a simmer. Add the chopped dried apricots and cover the tagine or skillet with a lid.
  5. Reduce the heat to low and let it simmer for 20 minutes until the chicken is cooked through and tender.
  6. While the chicken is cooking, rinse the rice under cold water until the water runs clear. In a separate pot, bring 300 ml of water to a boil and add the rinsed rice and a pinch of salt.
  7. Cover and reduce the heat to low, cooking for about 15 minutes until the rice is fluffy and all the water is absorbed.
  8. Once the chicken is done, stir in the slivered almonds and chopped cilantro, and let it cook for an additional 2 minutes.
  9. Serve the chicken tagine over the rice, garnished with additional cilantro if desired.
