  • Ground coriander - 1 teaspoon
  • Ground ginger - 1 teaspoon
  • Cinnamon stick - 1, broken in half
  • Chicken broth - 250 ml
  • Preserved lemons - 1, pulp removed, rind sliced
  • Green olives - 100 grams, pitted and halved
  • Fresh cilantro - 2 tablespoons, chopped, plus extra for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a tagine or heavy-bottomed pot, heat olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Season the chicken thighs with salt and pepper, then add them to the pot, browning them for about 5 minutes on each side.
