Ingredients

  • Chicken breast - 300 grams, cubed
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Wooden skewers - 4 (soaked in water for 30 minutes)

Steps

  1. In a large bowl, combine olive oil, lemon juice, minced garlic, cumin, coriander, paprika, cinnamon, salt, and black pepper to make the marinade.
  2. Add the cubed chicken breast to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 15 minutes to allow flavors to meld.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Thread the marinated chicken onto the soaked wooden skewers, packing them closely but not too tight.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Remove the skewers from the grill and let them rest for a couple of minutes before serving.
  7. Garnish with chopped fresh parsley and serve with your choice of side.
