Ingredients

  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Ginger powder - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Almonds - 50 grams, chopped (for garnish)
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lemon wedges - 2 (for serving)

Steps

  1. In a large bowl, combine olive oil, minced garlic, cumin, coriander, paprika, cinnamon, ginger powder, turmeric, salt, and black pepper to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or overnight for more flavor.
  3. Preheat your grill or barbecue to medium-high heat.
  4. Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 75°C (165°F) and the chicken is well-charred.
  5. While the chicken is grilling, toast the chopped almonds in a dry skillet over medium heat for about 3-4 minutes until golden brown.
  6. Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing.
  7. Serve the chicken garnished with toasted almonds and fresh cilantro, alongside lemon wedges for squeezing on top.
