Ingredients

  • Bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon

  • Paprika - 1 teaspoon

  • Black pepper - 1/4 teaspoon
  • Chicken broth - 2 cups
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 30 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced carrot, and bell pepper to the skillet. Sauté for an additional 5 minutes until the vegetables are tender.
  4. Stir in the diced chicken breast and cook until it is browned on all sides, about 6-8 minutes.
  5. Add cumin, cinnamon, turmeric, paprika, salt, and black pepper to the skillet, stirring well to combine the spices with the chicken and vegetables.
  6. Drain the basmati rice and add it to the skillet. Pour in the chicken broth and bring to a gentle boil.
  7. Reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
