Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 30 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced carrot, and bell pepper to the skillet. Sauté for an additional 5 minutes until the vegetables are tender.
- Stir in the diced chicken breast and cook until it is browned on all sides, about 6-8 minutes.
- Add cumin, cinnamon, turmeric, paprika, salt, and black pepper to the skillet, stirring well to combine the spices with the chicken and vegetables.
- Drain the basmati rice and add it to the skillet. Pour in the chicken broth and bring to a gentle boil.
- Reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
