Ingredients
- Zucchini - 2 medium (about 400g)
- Fresh parsley - 30g, chopped
- Cilantro - 30g, chopped
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Lemon juice - 30ml (about 2 tablespoons)
- Olive oil - 30ml (about 2 tablespoons)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 150g, halved
- Feta cheese - 50g, crumbled (optional)
Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create zoodles. Set aside.
- In a bowl, combine the chopped parsley, chopped cilantro, minced garlic, cumin, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper to make the chermoula sauce. Mix well until combined.
- Heat a large skillet over medium heat and add the chermoula sauce. Cook for 2-3 minutes, stirring constantly to prevent burning.
- Add the spiralized zucchini to the skillet and toss to coat the zoodles in the sauce. Cook for an additional 4-5 minutes until the zoodles are tender but still al dente.
- Add the halved cherry tomatoes and gently fold them in, cooking for another 1-2 minutes until warmed through.
- Serve the Chermoula Zoodles hot, garnished with crumbled feta cheese if desired.
