Ingredients

  • Zucchini - 2 medium (about 400g)
  • Fresh parsley - 30g, chopped
  • Cilantro - 30g, chopped
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Lemon juice - 30ml (about 2 tablespoons)
  • Olive oil - 30ml (about 2 tablespoons)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 150g, halved
  • Feta cheese - 50g, crumbled (optional)

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create zoodles. Set aside.
  2. In a bowl, combine the chopped parsley, chopped cilantro, minced garlic, cumin, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper to make the chermoula sauce. Mix well until combined.
  3. Heat a large skillet over medium heat and add the chermoula sauce. Cook for 2-3 minutes, stirring constantly to prevent burning.
  4. Add the spiralized zucchini to the skillet and toss to coat the zoodles in the sauce. Cook for an additional 4-5 minutes until the zoodles are tender but still al dente.
  5. Add the halved cherry tomatoes and gently fold them in, cooking for another 1-2 minutes until warmed through.
  6. Serve the Chermoula Zoodles hot, garnished with crumbled feta cheese if desired.
