Ingredients

  • White fish fillets (e.g., snapper or cod) - 400 grams
  • Fresh cilantro - 30 grams
  • Fresh parsley - 30 grams
  • Garlic - 3 cloves
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 4 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a food processor, combine the cilantro, parsley, garlic, ground cumin, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper. Blend until smooth to create the chermoula marinade.
  2. Place the fish fillets in a shallow dish and pour the chermoula marinade over them, ensuring they are well coated. Cover and marinate in the refrigerator for at least 15 minutes.
  3. Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
  4. Remove the fish from the marinade and let any excess drip off. Place the fillets on the grill and cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.
  5. Once cooked, remove the fish from the grill and let it rest for a couple of minutes before serving. Serve with lemon wedges and a side of your choice.
