- Olive oil - 2 tablespoons
- Fresh cilantro - 1/4 cup, chopped
- Fresh parsley - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Zucchini - 1 medium, thinly sliced
- Mozzarella cheese - 100 grams, shredded
- Cherry tomatoes - 100 grams, halved
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, combine olive oil, chopped cilantro, chopped parsley, minced garlic, cumin, paprika, cayenne pepper, lemon juice, salt, and black pepper to create the chermoula marinade.
- Add the fish fillets to the marinade, coating them well. Let them marinate for at least 15 minutes.
- Preheat your oven to 220°C (428°F).
- While the fish is marinating, prepare the zucchini by slicing it thinly to create a 'pizza crust.' Arrange the zucchini slices in a single layer on a baking sheet lined with parchment paper.
- Bake the zucchini slices in the preheated oven for about 10 minutes to soften them slightly.
- Remove the zucchini from the oven and arrange the marinated fish fillets on top of the zucchini slices.
- Sprinkle shredded mozzarella cheese and halved cherry tomatoes over the fish.
- Return the baking sheet to the oven and bake for an additional 15-20 minutes, or until the fish is cooked through and the cheese is melted and bubbly.
- Once cooked, remove from the oven and let it cool for a few minutes before slicing. Serve warm.
