Ingredients

  • White fish fillets (such as cod or haddock) - 300 grams
  • Fresh cilantro - 30 grams
  • Fresh parsley - 30 grams
  • Garlic - 3 cloves
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a food processor, combine cilantro, parsley, garlic, cumin, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper. Blend until you have a smooth paste.
  2. Place the fish fillets in a shallow dish and pour the chermoula marinade over the top. Ensure the fish is well coated. Cover and let it marinate in the refrigerator for at least 15 minutes.
  3. Preheat the grill to medium-high heat.
  4. Remove the fish from the marinade and let any excess drip off. Discard the remaining marinade.
  5. Place the fish fillets on the grill and cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.
  6. Serve the chermoula fish with a side of grilled vegetables or a fresh salad.
