Chermoula Chicken

Ingredients
- Chicken thighs - 300 grams
- Fresh cilantro - 30 grams
- Fresh parsley - 30 grams
- Garlic - 3 cloves
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a food processor, combine cilantro, parsley, garlic, cumin, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper. Blend until a smooth paste forms.
- Place the chicken thighs in a bowl and coat them evenly with the chermoula marinade. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard any excess marinade.
- Grill the chicken thighs for about 6-7 minutes per side, or until they reach an internal temperature of 75°C (165°F) and have nice grill marks.
- Remove from the grill and let rest for 5 minutes before slicing. Serve with your choice of sides.
