Ingredients

  • Chicken thighs - 300 grams
  • Fresh cilantro - 30 grams
  • Fresh parsley - 30 grams
  • Garlic - 3 cloves
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a food processor, combine cilantro, parsley, garlic, cumin, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper. Blend until a smooth paste forms.
  2. Place the chicken thighs in a bowl and coat them evenly with the chermoula marinade. Cover and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard any excess marinade.
  4. Grill the chicken thighs for about 6-7 minutes per side, or until they reach an internal temperature of 75°C (165°F) and have nice grill marks.
  5. Remove from the grill and let rest for 5 minutes before slicing. Serve with your choice of sides.
