Ingredients

  • Chickpeas - 240 grams (1 can, drained and rinsed)
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 30 grams, chopped
  • Parsley - 30 grams, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for cooking)
  • Whole wheat burger buns - 2
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2, sliced
  • Lettuce leaves - 2

Steps

  1. In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the chopped red onion, minced garlic, cilantro, parsley, cumin, paprika, coriander, salt, and black pepper to the mashed chickpeas, and mix until well combined.
  3. Form the mixture into two equal-sized patties, about 1.5 cm thick.
  4. Heat one tablespoon of olive oil in a non-stick skillet over medium heat.
  5. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and heated through, adding more oil if necessary.
  6. While the patties cook, prepare the burger buns by toasting them lightly.
  7. Assemble the burgers by placing each patty on a toasted bun, topped with slices of tomato, cucumber, and lettuce.
  8. Serve immediately with your choice of dipping sauce or a side salad.
