Ingredients

  • Swiss chard - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1, diced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 250 ml
  • Chickpeas - 100 grams, canned or cooked
  • Raisins - 30 grams
  • Almonds - 30 grams, toasted and chopped
  • Lemon - 1, juiced
  • Fresh parsley - a handful, chopped

Steps

  1. Heat the olive oil in a tagine or heavy-bottomed pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, diced carrot, and red bell pepper, cooking for another 5 minutes until softened.
  4. Add the cumin, coriander, cinnamon, paprika, salt, and black pepper, stirring well to coat the vegetables with the spices.
  5. Add the chopped Swiss chard and cook until it wilts, about 3 minutes.
  6. Pour in the vegetable broth and bring to a simmer.
  7. Add the chickpeas and raisins, mixing everything together.
  8. Cover the pot and let it cook on low heat for 20 minutes, stirring occasionally.
  9. Once cooked, remove from heat and stir in the lemon juice and chopped parsley.
  10. Serve warm, garnished with toasted almonds.
