Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Chickpeas - 1 can (400g), drained and rinsed
  • Chard - 200g, chopped (stems removed)
  • Vegetable broth - 400ml
  • Tomato paste - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste
  • Lemon - 1, juiced
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, diced carrot, and diced celery, cooking for another 5 minutes until they soften.
  3. Add the cumin, coriander, cinnamon, and paprika to the pot, stirring well to coat the vegetables with the spices. Cook for 1-2 minutes until fragrant.
  4. Introduce the drained chickpeas and chopped chard to the pot, mixing everything together.
  5. Pour in the vegetable broth and add the tomato paste. Stir well to combine, then bring the mixture to a simmer.
  6. Reduce the heat to low, cover the pot, and let it simmer for 15 minutes, allowing the flavors to meld.
  7. Season with salt, pepper, and lemon juice to taste before serving.
  8. Garnish with fresh parsley and serve warm.
