- Carrot - 1 medium, diced
- Celery stalk - 1, diced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Chickpeas - 1 can (400g), drained and rinsed
- Chard - 200g, chopped (stems removed)
- Vegetable broth - 400ml
- Tomato paste - 2 tablespoons
- Salt - to taste
- Pepper - to taste
- Lemon - 1, juiced
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, and diced celery, cooking for another 5 minutes until they soften.
- Add the cumin, coriander, cinnamon, and paprika to the pot, stirring well to coat the vegetables with the spices. Cook for 1-2 minutes until fragrant.
- Introduce the drained chickpeas and chopped chard to the pot, mixing everything together.
- Pour in the vegetable broth and add the tomato paste. Stir well to combine, then bring the mixture to a simmer.
- Reduce the heat to low, cover the pot, and let it simmer for 15 minutes, allowing the flavors to meld.
- Season with salt, pepper, and lemon juice to taste before serving.
- Garnish with fresh parsley and serve warm.
