- Olive oil - 2 tablespoons
- Onion - 1 medium, thinly sliced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 small, diced
- Garlic - 2 cloves, minced
- Harissa paste - 1 tablespoon
- Canned chickpeas - 100g, drained and rinsed
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Feta cheese - 50g, crumbled
- Lemon - 1, juiced
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat the olive oil over medium heat and sauté the onion until translucent, about 5 minutes.
- Add the diced red bell pepper and zucchini to the skillet and cook for another 5 minutes until softened.
- Stir in the minced garlic and cook for an additional minute, then add harissa paste, chickpeas, salt, and pepper. Cook for another 2 minutes, stirring well.
- Remove from heat and mix in chopped cilantro and lemon juice.
- Place the challah slices on a baking sheet and spread the vegetable mixture evenly over each slice.
- Top with crumbled feta cheese.
- Bake in the preheated oven for 10-12 minutes, until the challah is slightly toasted and the cheese is melted.
- Remove from the oven and let cool for a few minutes before slicing and serving.
