  • Whole wheat flatbread - 200 grams

  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Chickpeas - 200 grams, cooked or canned, drained
  • Tomatoes - 2 medium, chopped
  • Vegetable broth - 500 ml
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent, about 5 minutes.
  2. Add the diced carrot, zucchini, and red bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables start to soften.
  3. Stir in the chopped tomatoes and cook until they begin to break down, about 5 minutes.
  4. Add the cooked chickpeas, vegetable broth, ground cumin, ground coriander, paprika, salt, and black pepper. Bring the mixture to a simmer and let it cook for 15 minutes, allowing the flavors to meld.
  5. While the vegetable stew is simmering, tear the whole wheat flatbread into bite-sized pieces. Place the pieces in a serving bowl.
  6. Once the stew is ready, pour it over the torn flatbread, ensuring the bread absorbs the flavorful broth.
  7. Garnish with fresh chopped parsley and serve immediately.
