- Whole wheat flatbread - 200 grams

- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Chickpeas - 200 grams, cooked or canned, drained
- Tomatoes - 2 medium, chopped
- Vegetable broth - 500 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent, about 5 minutes.
- Add the diced carrot, zucchini, and red bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables start to soften.
- Stir in the chopped tomatoes and cook until they begin to break down, about 5 minutes.
- Add the cooked chickpeas, vegetable broth, ground cumin, ground coriander, paprika, salt, and black pepper. Bring the mixture to a simmer and let it cook for 15 minutes, allowing the flavors to meld.
- While the vegetable stew is simmering, tear the whole wheat flatbread into bite-sized pieces. Place the pieces in a serving bowl.
- Once the stew is ready, pour it over the torn flatbread, ensuring the bread absorbs the flavorful broth.
- Garnish with fresh chopped parsley and serve immediately.
