- semolina - 200 grams
- water - 250 milliliters
- olive oil - 2 tablespoons
- onion - 1 medium, finely chopped
- garlic - 2 cloves, minced
- carrot - 1 medium, diced
- zucchini - 1 medium, diced
- bell pepper - 1 medium, diced
- tomatoes - 2 medium, chopped
- chickpeas - 100 grams, cooked
- cumin - 1 teaspoon
- coriander - 1 teaspoon
- paprika - 1 teaspoon
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- fresh parsley - for garnish
Steps
- In a bowl, mix semolina with a pinch of salt and gradually add water, stirring until the mixture is smooth. Let it rest for 10 minutes.
- In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the diced carrots, zucchini, and bell pepper to the skillet. Cook for about 5 minutes, stirring occasionally.
- Stir in the chopped tomatoes, cumin, coriander, paprika, salt, and black pepper. Cook until the vegetables are tender, about 10-15 minutes.
- While the vegetables are cooking, steam the semolina mixture in a steamer for about 20 minutes until fluffy.
- Once the vegetables are done, add the cooked chickpeas and stir to combine. Adjust seasoning if necessary.
- Serve the vegetable mixture over a bed of fluffy semolina, garnished with fresh parsley.
