Ingredients

  • semolina - 200 grams
  • water - 250 milliliters
  • olive oil - 2 tablespoons
  • onion - 1 medium, finely chopped
  • garlic - 2 cloves, minced
  • carrot - 1 medium, diced
  • zucchini - 1 medium, diced
  • bell pepper - 1 medium, diced
  • tomatoes - 2 medium, chopped
  • chickpeas - 100 grams, cooked
  • cumin - 1 teaspoon
  • coriander - 1 teaspoon
  • paprika - 1 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • fresh parsley - for garnish

Steps

  1. In a bowl, mix semolina with a pinch of salt and gradually add water, stirring until the mixture is smooth. Let it rest for 10 minutes.
  2. In a large skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the diced carrots, zucchini, and bell pepper to the skillet. Cook for about 5 minutes, stirring occasionally.
  4. Stir in the chopped tomatoes, cumin, coriander, paprika, salt, and black pepper. Cook until the vegetables are tender, about 10-15 minutes.
  5. While the vegetables are cooking, steam the semolina mixture in a steamer for about 20 minutes until fluffy.
  6. Once the vegetables are done, add the cooked chickpeas and stir to combine. Adjust seasoning if necessary.
  7. Serve the vegetable mixture over a bed of fluffy semolina, garnished with fresh parsley.
