- Zucchini (grated) - 100 grams
- Red bell pepper (diced) - 50 grams
- Onion (finely chopped) - 50 grams
- Garlic (minced) - 1 clove
- Fresh parsley (chopped) - 2 tablespoons
- Black pepper - to taste
- Tomato sauce - 100 grams
- Feta cheese - 50 grams
Steps
- In a mixing bowl, combine the flour and salt. Gradually add warm water and olive oil, mixing until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Cover it with a damp cloth and let it rest for 15 minutes.
- In a skillet, heat a tablespoon of olive oil over medium heat. Sauté the onion and garlic until fragrant, about 2 minutes.
- Add the bell pepper and zucchini to the skillet, cooking for another 5 minutes until softened. Stir in the chickpeas, cumin, paprika, parsley, salt, and black pepper, and cook for an additional 3 minutes. Remove from heat.
- Preheat your oven to 220°C (428°F).
- Roll out the rested dough on a floured surface to fit a 9-inch (23 cm) pie dish. Place the dough in the dish, trimming any excess.
- Spread the tomato sauce evenly over the dough, then layer the vegetable and chickpea mixture on top.
- Crumble the feta cheese over the filling, then fold the edges of the dough over the filling slightly.
- Bake in the preheated oven for 20 minutes or until the crust is golden brown.
- Let the pie cool for a few minutes before slicing and serving.
