Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chickpeas (cooked) - 100 grams
  • Zucchini (grated) - 100 grams
  • Red bell pepper (diced) - 50 grams
  • Onion (finely chopped) - 50 grams
  • Garlic (minced) - 1 clove
  • Fresh parsley (chopped) - 2 tablespoons
  • Black pepper - to taste
  • Tomato sauce - 100 grams
  • Feta cheese - 50 grams

Steps

  1. In a mixing bowl, combine the flour and salt. Gradually add warm water and olive oil, mixing until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Cover it with a damp cloth and let it rest for 15 minutes.
  3. In a skillet, heat a tablespoon of olive oil over medium heat. Sauté the onion and garlic until fragrant, about 2 minutes.
  4. Add the bell pepper and zucchini to the skillet, cooking for another 5 minutes until softened. Stir in the chickpeas, cumin, paprika, parsley, salt, and black pepper, and cook for an additional 3 minutes. Remove from heat.
  5. Preheat your oven to 220°C (428°F).
  6. Roll out the rested dough on a floured surface to fit a 9-inch (23 cm) pie dish. Place the dough in the dish, trimming any excess.
  7. Spread the tomato sauce evenly over the dough, then layer the vegetable and chickpea mixture on top.
  8. Crumble the feta cheese over the filling, then fold the edges of the dough over the filling slightly.
  9. Bake in the preheated oven for 20 minutes or until the crust is golden brown.
  10. Let the pie cool for a few minutes before slicing and serving.
