Ingredients

  • whole wheat flatbread - 2 pieces
  • chicken thighs - 200 grams, boneless and skinless
  • olive oil - 2 tablespoons
  • onion - 1 medium, finely chopped
  • garlic - 2 cloves, minced
  • carrot - 1 medium, diced
  • zucchini - 1 medium, diced
  • red bell pepper - 1 medium, diced
  • cumin - 1 teaspoon
  • coriander - 1 teaspoon
  • paprika - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • fresh parsley - 2 tablespoons, chopped
  • water - 500 ml

Steps

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Add diced chicken thighs to the pot, cooking until browned on all sides.
  3. Stir in the diced carrot, zucchini, and red bell pepper, cooking for an additional 5 minutes.
  4. Season the mixture with cumin, coriander, paprika, salt, and black pepper, stirring well to combine.
  5. Pour in the water, bring the mixture to a boil, then reduce the heat and let it simmer for 25 minutes, or until the chicken is cooked through.
  6. Remove the chicken from the pot, shred it using two forks, and return the shredded meat back to the pot, mixing it with the vegetables.
  7. While the chicken is simmering, toast the whole wheat flatbreads in a separate pan until slightly crispy.
  8. To serve, tear the toasted flatbreads into pieces and place them in bowls. Ladle the chicken and vegetable mixture over the bread, garnishing with fresh parsley.
