- whole wheat flatbread - 2 pieces
- chicken thighs - 200 grams, boneless and skinless
- olive oil - 2 tablespoons
- onion - 1 medium, finely chopped
- garlic - 2 cloves, minced
- carrot - 1 medium, diced
- zucchini - 1 medium, diced
- red bell pepper - 1 medium, diced
- cumin - 1 teaspoon
- coriander - 1 teaspoon
- paprika - 1 teaspoon
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- fresh parsley - 2 tablespoons, chopped
- water - 500 ml
Steps
- Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add diced chicken thighs to the pot, cooking until browned on all sides.
- Stir in the diced carrot, zucchini, and red bell pepper, cooking for an additional 5 minutes.
- Season the mixture with cumin, coriander, paprika, salt, and black pepper, stirring well to combine.
- Pour in the water, bring the mixture to a boil, then reduce the heat and let it simmer for 25 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot, shred it using two forks, and return the shredded meat back to the pot, mixing it with the vegetables.
- While the chicken is simmering, toast the whole wheat flatbreads in a separate pan until slightly crispy.
- To serve, tear the toasted flatbreads into pieces and place them in bowls. Ladle the chicken and vegetable mixture over the bread, garnishing with fresh parsley.
